Healthy Apple Cinnamon Breakfast Muffins (for 2)

Wouldn’t it be great if you could turn a warm bowl of creamy apple cinnamon porridge into a muffin? And wouldn’t it be great if these muffins could be packed full of body-loving nutrients? They’d also have to be quick and easy to make, because…well, morning time! These were thoughts were running through my head the other morning when I came up the recipe for these muffins. And oh boy, they did not disappoint! Luckily, I only made this recipe for two, otherwise I would probably be eating my third one right now and questioning my life choices…

These breakfast muffins truly capture the essence of a warm and creamy bowl of porridge, and I would dare say that they are even yummier! Not only are they flavourful and moist, these muffins are jam-packed with protein and fibre to energise your body and mind for hours.

Digestion-friendly oats fill up your tummy while egg and LSA provide a protein boost to keep your blood-sugar levels balanced and curb sugar cravings. Add to this gut-loving probiotics in the form of Greek yoghurt, antioxidant rich cinnamon and a whole apple, you can see why these muffins make the perfect healthy breakfast choice to kick-start your day. Oh, did I mention that they are flour-free and have only 1 tablespoon of honey per serving? Yeah…so, you’d better crank that oven stat!

Version 2


  • 1/4 cup oats
  • 2 tbsp LSA
  • 1/4 tsp cinnamon
  • 1/4 tsp baking soda
  • Pinch salt
  • 1 tbsp coconut oil
  • 1 egg
  • 1 apple (grated)
  • 2 tbsp Greek yoghurt
  • 2 tbsp honey
  • 1/2 tsp vanilla extract


Pre-heat oven to 180C/350F. Place 2 muffin liners in a muffin tin and set aside. In a bowl, stir together dry ingredients. Zap coconut oil in a microwave-safe bowl and pour in to dry ingredients. Whisk egg and add to dry ingredients along with remaining wet ingredients. Spoon mixture into muffin liners and bake for 15 minutes.
